Minted Mashed Peas

 

2 1/4 cups dried peas

1 tsp. sea salt

4 tbsps. malt vinegar

1 tbsp. mint jelly

ground black pepper

 

Soak the peas for 2 hours.

Drain the peas and place in a pan with 1 1/2 cups of cold water. Bring to a boil

and simmer for 20 minutes until the mixture is tender and thickened.

Stir in the salt, vinegar and mint jelly, and season to taste. Serve warm.

Serves 6.
