Guest guest Posted August 8, 2008 Report Share Posted August 8, 2008 You can eat loads of this soup at anytime, especially if you are on a diet. I find it very filling and delicious. Three small Zucchini - chopped 1-1/2 cups of eggplant - chopped Two small Yellow Squash - chopped 14.5 oz can of chopped tomatoes (with chilis if you like it spicy) 14.5 oz can of whole tomatoes, juice and all, chopped 2 small cans of mushrooms (I use the stems and pieces) 1 cup of water 1/2 teaspoon of Italian seasoning 1/2 teaspoon of minced garlic (or equivalent) 1/2 teaspoon of salt 1/4 teaspoon of pepper Combine all ingredients in a large pot, bring to a boil, cover and turn down the heat and stew for 30 minutes.
