Cauliflower and Onion Mustard Pickles

 

3 large cauliflower

3 lbs. pickling onions

 

 

Dressing:

3 tbsps. mustard

3 tbsps. flour

 

1 tsp. pepper

1 tbsp. turmeric

2 cups sugar

1 quart vinegar

 

salt to taste

 

Break cauliflower into flowerettes and cook unitl

partly done. Wash and peel onions. Mix cauliflower and dressing together, bring

to a boil for a few minutes or until the dressingis thick. Stir onions into

mixture, let cook ver slowly until onions are just tender. Stir frequently. Pack

into hot sterilized jars and seal.
