Mindy veggies for breakfast

You can add them to a smoothie, I like to steam them and eat with left over rice

for breakfas, I will also grate them and add to leftover mashed potatoes and

make potato pancakest.  You could add them to an omlette.  I make sweet breads

with some of them and have a slice with my breakafst. 

Your idea is great.  I never waste my veggies, they get tossed into or on

something.

I want to thank whoever, I believe it was Donna, said that they have

vegetables for breakfast so they don't go bad. I was looking around

this morning wondering what to do for breakfast, and I got this great

idea thanks to the group. I toasted a bagel, put a little bit of

cream cheese on it, then I used up some veggies from my garden. I

used tomato, onion, green pepper, banana pepper. It was so yummy.

Now I'm sad that was my last bagel.
