zucchini or squash muffins (no dairy, no eggs, no oil)

These are really good. I used the yellow straight neck summer squash.

The apple sauce takes the place of the oil and eggs. I had not tried

this before and was very pleased with the results.

 

Zucchini muffins (vegan, no fat added)

 

3 cups flour (all purpose unbleached)

2 cups sugar

2 cups apple sauce

2 ½ cups grated yellow zucchini or squash

3 tbsp ground cinnamon

3 tbsp vanilla

Grated zest of a myers lemon

1 tsp salt

1 tsp baking powder

1 tsp baking soda

 

Mix flour with dry ingredients (salt, baking soda, powder) in separate

bowl. Mix sugar, grated squash, apple sauce and spices. Add flour

mix and mix with spoon. Do not over mix. Pre-heat oven and pour

batter into greased (or papered) muffin tins and bake at 350F oven for

about 30-40 minutes.

oh these sure sound good. I might just have to make a run to the produce stand

that is about a mile from my house and get some zucchini for this. Thanks

Roseta for sending this in. I think I'm to add a few walnuts or pecans, because

I'm such a nut or lol should I say 'nut lover " . ha ha ha

You are welcome Judy! Yes, walnuts or pecans can go in too of

course and they are so good. Instead of going to the store, go to

my garden and pick the squash you need there! It is under the blue

corn and getting bigger by the minute.
