Guest guest Posted August 5, 2008 Report Share Posted August 5, 2008 These are really good. I used the yellow straight neck summer squash. The apple sauce takes the place of the oil and eggs. I had not tried this before and was very pleased with the results. Zucchini muffins (vegan, no fat added) 3 cups flour (all purpose unbleached) 2 cups sugar 2 cups apple sauce 2 ½ cups grated yellow zucchini or squash 3 tbsp ground cinnamon 3 tbsp vanilla Grated zest of a myers lemon 1 tsp salt 1 tsp baking powder 1 tsp baking soda Mix flour with dry ingredients (salt, baking soda, powder) in separate bowl. Mix sugar, grated squash, apple sauce and spices. Add flour mix and mix with spoon. Do not over mix. I might just have to make a run to the produce stand that is about a mile from my house and get some zucchini for this. Thanks Roseta for sending this in.
