Who suggested anasazi refritos?

I've deleted some email and don't recall who suggested using anasazi to

make refried beans. I tried it last night, and you're right, they make

about the heartiest refritos ever.

 

I made a vegan meal using them. I steamed some corn tortillas and lined

a plate with them. I made some fresh salsa (Walla Walla sweet onions,

jalapenos, cilantro and fresh tomatoes all run through a food processor.)

 

I put a little olive oil in a cast iron skillet, added the anasazi beans

and a little cooking liquid, mashed the beans with a potato masher

leaving them chunky, and cooked down the liquid until I got the

consistency I like. Then I salted them to my taste.

 

I spread the refritos on the tortillas and slathered on the fresh salsa.

No cheese or any other dairy. It was delicious and filling, and dairy

wasn't missed.
