Ooh, thank you for reminding me! The omelet looked wonderful to me, too,

and I'd completely forgotten about it. Those lemon bars sound amazing.

I'd promised myself I wouldn't buy The Joy of Vegan Baking until I had

lots of gift-baking to do, but I feel my resolve weakening
