Parboiling is where you drop the veggie in boiling water and cook for 5 minutes

and then drop in ice water to cool down quick. Once cooled, then you freeze it

in zip lock bags, freezer bags, or plastic containers. You'll get freezer

burn with veggies if you don't do this step before you freeze them. It does

help it retain nutrients. Then when you are ready to eat it, just rinse in a

strainer bowl, to remove frozen moisture in them and drop into boiling

salted(optional) water and boil until they are tender.

Judy-Re: Question of the Week - What do you do

with your excess summer produce?

Judy, does parboiling corn help it retain nutrients? I've just been

husking it and freezing, but having a freezer is still new to me. (Yay,

freezer!)

Peace,

Mo
