It's from Susan V's fat free vegan blog, and it's all kinds of cheesy, rich, comforting goodness. I've only made it once, but I was dazzled. There's also an extremely yummy macaroni & cheese recipe that she links to in the intro to the recipe. (The casserole is tagged " higher fat " --I'm only mentioning this because of the blog name. The casserole itself doesn't really appeal to me but I am most impressed by the look of the egg-free omelette which was pictured on the same page and which uses silken tofu. I shall be trying that in the next few days :-) I used silken tofu for the first time last week when making the lemon bars from the Joy of Vegan Baking Book. They were absolutely wonderful and I took them to my zikr group and fed them to a group of omnivores who were also impressed and requested the recipe. They are a great substitute for the tarte au citron I have been yearning for. I just love that book.
