Golden Potato and Tempeh Casserole (vegan)

I've been meaning to post a link to this recipe since the discussion of

nondairy cheeses started. It's from Susan V's fat free vegan blog, and

it's all kinds of cheesy, rich, comforting goodness. I've only made it

once, but I was dazzled. :) I imagine it'll be a regular thing once the

temperatures are lower. Here's a link to the recipe:

.. There's also an extremely yummy macaroni & cheese recipe that she

links to in the intro to the recipe. (The casserole is tagged " higher

fat " --I'm only mentioning this because of the blog name. She gives

nutritional info at the bottom of both recipes.) Enjoy!

Thanks for sharing this blog. That recipes sounds yummy. I might just get out

my frozen tempeh and make this... Love the potatoes in it.

Thanks for posting that link, Mo. The casserole itself doesn't really

appeal to me but I am most impressed by the look of the egg-free

omelette which was pictured on the same page and which uses silken

tofu. I shall be trying that in the next few days :-)

 

I used silken tofu for the first time last week when making the lemon

bars from the Joy of Vegan Baking Book. They were absolutely

wonderful and I took them to my zikr group and fed them to a group of

omnivores who were also impressed and requested the recipe. They are

a great substitute for the tarte au citron I have been yearning for.

I just love that book.
