Guest guest Posted August 3, 2008 Report Share Posted August 3, 2008 This wonderful recipe from Robin Robertson's _Vegan Planet_ has become my favorite dish over the last few months. It freezes beautifully if you chop the carrots fairly fine in a food processor, and is very easy to make in huge batches (for freezing). I lower the fat content by subbing 3/4-cup soy milk, 1/2 tsp coconut extract & 1/4-cup coconut milk for the cup of coconut milk, and steam-frying the puree instead of using the full 2 tablespoons of olive oil (by heating pan, heating about 1/4 to 1/2 tsp olive oil distributed more or less evenly over the bottom of the pot, adding puree with about 2-3 tablespoons of water & sometimes more water if the puree dries out while it's cooking). I also like using red lentils because they're so pretty Curried Lentils with Carrots and Peas 1 large yellow onion, cut into pieces 2 garlic cloves, peeled 1 tsp peeled & chopped ginger 2 tablespoons of olive oil 1 tablespoon curry powder 1/2 teaspoon ground cardamom 1/2 teaspoon ground cinnamon 1/2 teaspoon dry mustard 1/4 teaspoon cayenne 1/4 teaspoon ground allspice 1/4 teaspoon turmeric 3 cups water 1-1/4 cups dried brown lentils, picked over and rinsed 2 medium carrots, halved and cut into thin half-moons 3/4-cup frozen peas, thawed 1 cup unsweetened coconut milk salt & black pepper to taste 1. Puree the onion, garlic & ginger in a food processor 2. Heat olive oil in a large saucepan over low heat. Add the puree, cover, and cook for about 5 minutes, stirring a few times. Stir in the spices over heat for about 30 seconds. Add water and bring to a simmer. Add the lentils. Cover and cook for about 10 minutes. Add the carrots. Cover again and cook until carrots and lentils are tender, about 20-30 minutes. 3. Add peas, coconut milk & salt and pepper to taste. Simmer, uncovered, to incorporate the flavors, about 10 minutes.
