The woman cashier spoke very little English and I don't even believe I knew what it was called. I gave it a very quick rinse and boiled it up. It was so bitter I tossed it out and the uncooked balance. Some years later I saw it boxed in a Mrs. Gooch health foods store and read the instructions. I gave it a try again and it was delicious. It became a favorite grain of mine immediately after that. A very long rinse is the key to this wonderful grain. I eat it for breakfast like a hot cereal and make the Peruvian stew with it (I use whatever vegies I have on hand.) I do make sure I rinse and rinse and rinse some more! More than once?? Why is it bitter? I'm so glad I haven't cooked it yet,lol. I learn so much from this group!! It's bitter as a defense against bugs and birds, jst make sure to rinse it off becuase it doesn't taste good. Place it in a mesh strainer and give it a good long rinse and move it around as you rinse. Don't use soap or anything like that. You will enjoy quinoa, toss some into your soups too.
