Guest guest Posted August 2, 2008 Report Share Posted August 2, 2008 We were talking about pressure cooked beans recently. I just wanted to share a recipe I made with garbanzos I'd cooked and frozen. It's really tasty, and homecooked beans make a much better hummus than canned. Canned beans are fine, don't get me wrong. They're a great convenience food, and I always have some in the pantry. But if you get in the habit of cooking up a big pot of beans and then freezing them, you'll generally have homecooked ones on hand. Here's the recipe I made. You can substitute 1 can of garbanzos if you don't have any in the freezer. Hummus 1 1/2 cups cooked garbanzo beans (this is about 1/2 cup dried beans, but who would cook such a small amount?) 1/4 cup liquid from the beans juice of 1/2 lemon 2 tbsp tahini 2 cloves garlic, crushed 2ish tbsp olive oil salt to taste -- about 3/4 tsp if you're me Put everything into your food processor and blend until it's a paste. You don't have to blend the H-E-double matchsticks out of it, but makes sure it's pretty well mixed. Serve with fresh veggies, bread, or just eat it with a spoon.
