I want to try to reproduce it, but I have no experience with savory crepes and have never even eaten one. You can see the crepe description here (Zorba the Greek): http://www.squatandgobble.com/menu_crepes.htm But what it says is: Cheddar, onions, artichokes, feta, mushrooms, tomato, spinach, olives, and yogurt-mint sauce. OK, I have some crepe batter in the fridge and I found a recipe for yogurt-mint sauce. But how does one prepare the filling? I assume you saute the onions and mushrooms and then throw in the artichoke hearts, tomatoes, spinach and cook for a bit. Then throw in the cheddar and let it melt. But can you cook feta or do you think it should be added after the cooking is over? And what about the yogurt-mint sauce? I assume that's added at the end of cooking too.
