Guest guest Posted July 29, 2008 Report Share Posted July 29, 2008 My friend gave me a huge bag of fresh squash from her garden and I made this for dinner. Give it a try, you won't be disappointed. You can really taste the goodness of the squash. Fawnette Summer Squash and Red Pepper Medley 1 tbsp. extra virgin olive oil 1/2 tsp. minced garlic 2 large zucchini, cut into thick matchsticks 2 large yellow summer squash, cut into thick matchsticks 1/2 cup finely diced red bell pepper (or a green, yellow or orange one) 1 tbsp. tamari or soy sauce 1 tbsp. fresh lemon juice Heat the oil in a large skillet or wok over medium heat. Add the garlic and saute for 1 minute. Add the zucchini and squash and saute for 5 minutes. Stir in the red bell pepper and continue to saut? until all the vegetables are tender, about 5 minutes longer. Sprinkle in the tamari and lemon juice and toss until the vegetables are evenly coated.
