Guest guest Posted July 28, 2008 Report Share Posted July 28, 2008 Summer Squash with Garlic Laden Chermoulla 3 or 4 summer squash of varying types 1/2 cup chopped fresh cilantro 5 garlic cloves, minced or pressed 1 tbsp. grated fresh ginger root 2 tsps. ground cumin 1/2 cup fresh lemon juice 1/2 fresh chile, minced, seeds removed for a milder 1 medium tomato, chopped salt to taste In a blender or food processor, combine all ingredients except summer squash and purée to form a smooth sauce. Add salt to taste. Set aside. Meanwhile, slice and lightly steam your summer squash. Serve steamed or otherwise cooked squash, maybe on top of some cooked couscous or steamed rice, with the chermoulla poured over all. Quote Link to comment Share on other sites More sharing options...
