Guest guest Posted July 23, 2008 Report Share Posted July 23, 2008 Carrot-Walnut Muffins 1 1/2 cups whole wheat flour 1/2 cup wheat bran 1/2 cup brown sugar 1 teaspoon baking soda 1 tablespoon baking powder 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 egg 2 tablespoons vegetable oil 2/3 cup vanilla yogurt 2 1/2 cups grated carrots 1/4 cup chopped walnuts Preheat oven to 350 degrees. Combine the dry ingredients in a bowl. Add the remaining ingredients, except walnuts, and stir to blend. Spoon into oiled muffin tins or paper muffin cups.
