Guest guest Posted July 20, 2008 Report Share Posted July 20, 2008 I found this recipe in a little Oregonian cookbook and it is so wonderful to taste when peaches are fresh in season. I have made it with fresh pears, kiwi, and nectarines! It works great with any soft fresh fruits. I haven't tried it with watermelon yet... Give it a try; you don't need a special occasion. Just celebrate summer and being alive. Peachy Champagne 4 medium size ripe peaches 1/4 cup sugar 2 Tbs. lemon juice 3/4 cup water 1 bottle inexpensive dry champagne Peel, halve and coarsely chop peaches. Place fruit in a blender with sugar, lemon juice and water. Blend until puréed. Cover and let refrigerate for up to 3 hours. To make drinks, pour about 1/4 cup peach purée into glass; slowly add champagne to top of glass. Stir to blend. Garnish as desired.
