For long term storage, put fresh ginger in a wine like Sherry that has

a high alcohol content. I slice it up and put it in a jar and add dry

sherry. Then I can use the " sherried ginger " as I like and the sherry

has a wonderful ginger flavor to add to recipes. It keeps indefinitely

in a covered jar in the refrigerator.
