Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 * Exported from MasterCook * Spaghetti with Sunflower Seeds - 6 pts, Carbs 33g; Fiber 3g Recipe By :Quick After Work Vegetarian Coobook by Judy Ridgway Serving Size : 4 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs Quick Spicy Veggie Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound spaghetti -- dried 2 ounces sunflower seeds 1 1/2 ounces sun-dried tomato paste 2 garlic cloves -- peeled and crushed freshly ground black pepper olive oil 1/3 cup fresh herbs -- chopped or shredded freshly grated Parmesan cheese Cook spaghetti in salted boiling water 8-10 minutes or as directed on package. In a dry skillet, toast sunflower seeds until golden. Allow pan to cool slightly. Stir in tomato paste, garlic, pepper and a little olive oil, depending on how much there is in the paste. Stir over medium heat for about 1 minute. Drain cooked spaghetti and place in a heated serving bowl. Stir in sauce and herbs. Serve with more olive oil and Parmesan cheese. This sauce may seem a bit dry when you are making it, but it's fine once it is mixed with the pasta. So avoid the temptation to add too much oil or the flavors will be diluted. Good herbs to use are sage, mint, and thyme.
