Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 Ann, I have a similar challenge with my husband when it comes to some of the vegetarian, and *especially* vegan additions I'd like to use. He likes baked, seasoned tempeh " bac*n " , but not tempeh ch*ken salad. My daughter is still at that age where she doesn't want to eat the " weird " veggies---like broccoli, mushrooms, and spinach. (Of course neither did I at her age!) However, with the lasagna, I used a recipe the other day that substituted mashed, soft tofu for the cottage cheese!!! Try that on your hubby. The mashed tofu looks so much like the cottage cheese, he'll never know he got a boatload of protein in such an unlikely manner. Pack that dish with veggies you know he'll eat, and I betcha you'll have a winner. It takes one block of mashed silken tofu, mixed with your choice of dried italian herbs.
