Guest guest Posted July 17, 2008 Report Share Posted July 17, 2008 * Exported from MasterCook * Pesto of Sun Dried Tomatoes with Arugula - 9 pts Recipe By : " Pasta Fresca " by Viana La Place and Evan Kleiman Serving Size : 5 Preparation Time :0:00 Categories : Condiment Low Fat (less than 25%) Quick Spicy Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup sun-dried tomatoes -- plump and moist 1 small garlic clove 1/2 teaspoon red chile pepper flakes 1/4 cup extra virgin olive oil salt 1 pound spaghettini 2 bunches arugula -- trimmed and coarsely chopped freshly grated Parmesan cheese In a food processor with a steel blade or in a blender, process the sun-dried tomatoes with the garlic, red chile pepper, and extra-virgin olive oil until the mixture has a rough pesto texture. Scrape out the mixture and transfer to a small bowl, and add salt to taste. Cook the spaghettini in abundant boiling salted water until al dente. Drain, leaving a little water clinging to the strands. Place pasta in a heated serving bowl and toss with pesto to coat lightly. Sprinkle with the chopped arugula, toss again, and serve with Parmesan cheese on the side. The sun-dried tomato has suffered such a fate. Use sun-dried tomatoes that you make yourself. They must have enough moisture left in them to create the creamy consistency required for this sauce.
