Black Bean and Rice Cakes - 4 pts, 27g Carbohydrate; 3g Dietary Fiber

Amount Measure Ingredient -- Preparation Method

8 oz. Mexican seasoned Rice -- (1 package) or Spanish style

yellow rice

1 can black beans -- (15 oz.) 1 can

Oil for frying

1/2 large red and green pepper -- seeded, chopped

1 small onion -- chopped

1/4 cup cilantro leaves chopped

1 cup frozen corn kernels

1 teaspoon Cumin seed

1/2 lime -- zest from half a lime

3 eggs -- lightly beaten

8 soft tacos

1 cup Sour Cream

Salsa

 

Drain beans Set aside.

Place tacos in processor and process to a fine crumb.

Cook rice as directed on package after rice is cooked open lid and stir in beans

corn, taco crumbs and cilantro to rice use paddle to mix in; set aside to cool.

Heat 2 Tbsp. of the oil in large skillet on medium-high heat. Add cumin, peppers

and onion; cook and stir 10 minutes or until crisp-tender.

Transfer rice and bean mixture to large bowl. Stir in pepper and onion mixture,

lime zest and egg until well blended. Cover and refrigerate 2 hours or until

chilled.

Shape rice mixture into 16 cakes, using about 1/4 cup of the rice mixture for

each cake. Heat 2 inches of oil in large nonstick skillet on medium-high heat.

Add rice cakes in batches; cook 5 minutes on each side or until lightly browned

on both sides.

Serve each cake topped with 1 Tbsp. of the sour cream and salsa.
