Guest guest Posted July 17, 2008 Report Share Posted July 17, 2008 Orzo with Fresh Peas and Mint Pesto 1 lb. orzo pasta cooked al dente 1/2 cup mint pesto, homemade or store bought (see below for a recipe) 1/2 lb. fresh peas blanched salt to taste freshly ground black pepper to taste finely chopped fresh parsley for garnish Place the orzo in a large bowl and combine with the pesto. Fold in the peas and season with salt and pepper to taste. Garnish with fresh parsley. Yields 4 servings. Mint Pesto 2 c Firmly packed mint leaves 1 tb Chopped nuts 1/4 ts Salt 1 sm Clove garlic, minced Some olive oil 3 tb Grated Parmesan cheese Toss the fresh mint leaves into a food processor or blender along with the salt, garlic and nuts. (Pine nuts are good; walnuts are okay too.) Start the food processor and then slowly add olive oil. Don't process too long or add too much oil; aim for a consistency that can be spread with a knife.
