Donna Avocado and Green Chile Soup Source: Home Cooking - by Linda McCartney 2 Ripe avocados 3 cups unsweetened Soy milk 4oz Canned green chilies, ortega,they are mild 1 md Onion; chopped Salt and pepper to taste 2 tbs lemon juice 2 tbs dry sherry or white grape juice Garnish: Chopped ortega chilies,fresh parsley or crushed tortilla chips. even chopped green onion or chives Cut the avocados in half and remove the pits. Scoop out the avocado pulp and puree in a blender. Add the remaining ingredients except garnish to the blender and puree until evenly smooth.
