I realize this is not a medical group, but I had info from the Internet that they are helpful. I am just asking for general information. Guest guest Posted July 17, 2008 Report Share Posted July 17, 2008 Yes, the inulin has been seen to lower blood sugar, and many type 2 diabetics in particular take it regularly for that (i suggest to my patients to eat one raw and one cooked per week for this purpose). Interestingly, it's also a prebiotic, in other words, it promotes " healthy " bacteria in the gut and is therefore beneficial to the entire body (eg. fights cancer). They are very versatile to cook with, one of my favorite ways is to get the largest available, cut them into slices and have them with a dip, thus making them a raw chip, they have a very fresh taste that goes really well with a tofu-dill sauce.
