EASY Pesto roasted potatoes(I did the first 2 steps ahead of time) 1.quarter small red potatoes and toss with olive oil, salt and pepper. 2.Roast in oven 400 degrees for about 20-30 minutes or until just tender,edible but not smooshy. 3.Cool and transfer to microwave safe dish. To cooked pasta, add diced cucumber, tomato, sliced black olives, rinsed and quartered artichoke hearts, chopped parsley, oregano, and basil.
