I like to make simple oatmeal cookies and add ginger, cardamom and cinnamon. Delicious! I've made them to give as gifts several times and everybody's loved them, especially me!! Another thing I really like to do with ginger is simmer down blueberries with ginger (and sometimes a little cumin and/or cayenne), and serve it over baked sweet potatoes--Yum!
