I'm a new vegetarian and very liberal. My family and friends love for me to make this recipe in the summer. Watermelon Cookies 1/3 cup margarine, softened ½ cup veg. shortening ¾ cup sugar 1 large egg 1 Tablespoon milk 1 tsp vanilla extract 2 cups flour 1 ½ tsp baking powder ½ tsp salt Red food coloring ( natural ) Mini chocolate chips For frosting: 1 ½ cups sifted powdered sugar 2 Tablespoons water Green food coloring (natural) Beat margarine and shortening in large mixing bowl at medium speed; gradually add sugar, beating well. Stir in egg, milk, and vanilla. Combine flour, baking powder, and salt—gradually add to above mixture and mix well. Add red food coloring to dough to make it the color of watermelon, beating until blended. Shape dough into ball, cover, and chill at least 3 hours. It works best if you work with part of the dough and keep the rest refrigerated. Roll out dough and cut into 3 inch round shapes (I use a biscuit cutter) and cut each shape in half. Press several mini chocolate chips into each cookie to look like seeds. Place on ungreased cookie sheet and bake at 375 degrees 8-10 minutes. Cool on wire rack. Combine powdered sugar, water, and green food coloring to make frosting the color of watermelon rind. Dip round edge of cooled cookie in frosting and place on waxed paper until frosting is firm. I'm not too good at baking, but these sound easy enough to try.
