Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 Bay Roasted Carrots 3 lbs. carrots, peeled and cut into 2 inch pieces vegetable oil 4 bay leaves mild honey or maple syrup ( optional ) coarse salt and freshly ground black pepper Heat the oven to 400 degrees. Toss the carrots lightly in vegetable oil to coat. Season well with salt and pepper. Place the carrots in a baking dish. Add the bay leaves. Bake in the heated oven until fork tender, 45 to 60 minutes. Remove the bay leaves before serving. For added sweetness, drizzle with a bit of mild honey while hot.
