Steve's Sounds Bad But Tastes Good Tofu Salad Comments: This takes about 15 minutes to make, most of which is prep time. This is one of those dishes that is never exactly the same each time. It invites experimentation to suit to your taste. This sounds 'yucky' but even my kids like it. Personally, I like it best with lettuce and tomato on a delicate 7 grain bread. .. mmmm! Ingredients: 1 pound (block) soft tofu* *you can experiment with flavored of seasoned tofu also One medium red onion 2 stalks celery 2 or 3 carrots Bunch fresh cilantro Mayonnaise Mustard Sour Cream Yogurt salt, pepper By Hand: Chop onion and celery very finely. Grate carrots then chop with rest of vegetables. Mince cilantro and add to chopped vegetable mix. In a bowl, separately crush tofu brick with a fork until mashed evenly. Add vegetable mix to the bowl. Add mayonnaise and/or mustard to taste. (As a lower fat alternative (or taste alternative) use sour cream, or yogurt instead of mayonnaise). Mix together completely. Add pepper and salt to taste. By Technology: Put onion, celery and carrots in to food processor. Process until processed. Add cilantro and process more. Then add tofu and process. This will make it anywhere from chunky to creamy depending on how long you process. Add mayonnaise and mustard salt and pepper to taste. Enjoy as a stand alone dip, as a spread on crackers, as a topping on a salad, or as a sandwich spread on bread. Bon appetite. My boys, for whatever reason, don't have a taste for it, so it's left out of the posted recipe... however, like all recipes, it's open to personal interpretation. I like to freeze my tofu first, then make tofua or mock egg salad (tumeric) etc. I add cuke, celery, finely shredded carrots etc....now I need to go make some for tomorrow (it's better when it melds overnight!) Cilantro is definitely an acquired taste. I remember the first time I tried fresh cilantro, I HATED it, but it's grown on me over the years.
