Chunky Pepper Pasta Sauce - 0 pts, Carbs 7.8, Fiber 2.2g

 

1 cup chopped onions

1 cup chopped sweet red peppers

1 tablespoon minced garlic

1 teaspoon olive oil

5 cups chopped tomatoes

1/4 teaspoon dried oregano

2 tablespoons chopped parsley

 

 

 

 

 

In a Dutch oven, combine the onions, peppers, garlic, and oil. Cook, stirring,

over medium-high heat for 5 minutes, or until soft but not browned. Add the

tomatoes and oregano. Cook, stirring occasionally, for 10 minutes, or until

thick. Add the parsley and stir well.

 

Serves: 4

Prep Time: 10 mins

Cook Time: 15 mins

Total Time: 25 mins
