Guest guest Posted July 5, 2008 Report Share Posted July 5, 2008 Tomato, White Bean & Escarole Sauce 1 teaspoon extra-virgin olive oil 3 cloves garlic, finely chopped 1 1/2 cups marinara sauce 3 cups coarsely chopped escarole 1 15-ounce can Great Northern or cannellini beans, rinsed 1/3 cup dry white wine Salt & freshly ground pepper to taste Heat oil in a saucepan over medium heat. Add garlic and stir until golden, about 30 seconds. Add marinara sauce, escarole, beans and wine. Bring to a simmer and cook for 1 minute. Season with salt and pepper.
