Rice with vegetables

My older sister cooked dinner the other night. While a decent meal,

she made waaaay too much. Now we have a huge amount of mostly cooked

white rice mixed with peas and corn that we don't know what to do

with. Rather than eat the same meal every night for over a week, does

anyone have any ideas on how else we can use prepare this? All I can

think of is fried rice :]

Make a veg burger recipe and toss some into the mix, make soup and at

the end of the soup turn the flame off and toss a few cups into the

soup. Make tostadas and add some to the tostadas but I would warm it

first and stir some good green chile salsa or garden veg salsa into the

rice. You can saute some mnushrooms, garlic and onions with herbs and

eat on top of the rice.
