Guest guest Posted July 2, 2008 Report Share Posted July 2, 2008 Pesto Pea Salad by The Barefoot Contessa 1 bag frozen peas, defrosted 1 bag spinach, washed and dried 1/2 cup pesto 1 handful pinenuts Mix together and serve. I had this for lunch yesterday and a late night snack last night, (oh, and a sunbutter and jam sandwich, LOL). Lunch tomorrow, if I don't finish it off tonight Cassie " life's a garden, dig it!
