Did you know Rachel Ray has a vegetarian cookbook? Most of the recipes are her

Grandfathers.

Pesto Pea Salad by The Barefoot Contessa

1 bag frozen peas, defrosted

1 bag spinach, washed and dried

1/2 cup pesto

1 handful pinenuts

Mix together and serve.

 

I had this for lunch yesterday and a late night snack last night, (oh, and a

sunbutter and jam sandwich, LOL). Lunch tomorrow, if I don't finish it off

tonight
