question ? wheat gluten

My husband is type II diabetic. He eats gluten-based foods. Gluten is

the protein in wheat, rye, and barley so it is lower in carbohydrates

than the rest of the wheat berry. It does not contain any noticeable

fiber. It is the elastic portion of wheat that helps yeasted breads

rise.

This is one of those times the only possible answer is YMMV. (Your

Mileage May Vary)

 

The only way to know for sure is to test it out. Check your baseline

blood sugar. Eat some food with wheat gluten. Wait and hour and test

again. Even if one type 2 diabetic can do well on it, another may not.

Also, quantity will affect blood sugar. Also, other ingredients/foods

prepared with the gluten affects the blood sugar.

 

Sorry we can't give a more definitive answer.
