Guest guest Posted July 1, 2008 Report Share Posted July 1, 2008 Lettuce, beets and fresh fig salad I am blessed with two large fig trees so I am almost in heaven. This salad was well received by someone that proclaims not to like fresh figs. The beets and lettuce were also home grown, The beets give the salad a great color touch. Lettuce leaves, enough for a large salad bowl. Beet leaves (from one beet) 1 medium red beet, peeled and grated 4-5 fresh green figs, quartered (I used the large green type) goat cheese 2 oz, crumbled olive oil salt balsamic vinegar lemon juice honey to taste freshly ground pepper toasted walnuts tony chachzarades (sp?) or creole spice mix Wash and break lettuce and chop beet greens. Marinate grated beets in balsamic and lemon juice adding a tsp tony schazarades creole seasoning. Save marinating juice. Layer lettuce leaves on a plate and top with chopped beet greens. Add salt and olive oil. Follow by grated beets, and spread fresh figs around. Add honey to beet marinade (it should be dark pink) and drizzle over figs. This makes a beautiful pink spot over each fig. Sprinkle goat cheese and walnuts around. Grind fresh pepper on top. Quote Link to comment Share on other sites More sharing options...
