Guest guest Posted June 30, 2008 Report Share Posted June 30, 2008 I add shredded carrots and shredded zucchini to my tomato based pasta sauces and have for years.....the kids never knew until they got older. I love eggplant but I never thought to add it to pasta sauce either and you know what?....it would blend really well because of the bland flavor! What an idea!! Nancy C. Katie, I love this idea! Guest guest Posted June 30, 2008 Report Share Posted June 30, 2008 I haven't tried using carrots, but I do put zunnhini in my sauce. I don't shred it, though. I saute the chunks along with the onion and garlic when I start, so there are some " tooth-able " chunks. One of the best parts about the eggplant is that when cooked it just blends into the ssuce leaving no trace. I hope you try it and like it.
