Dojay Baked Squash with Spicy Lime Butter 2 delicata or sweet dumpling squash (they are the small hard shelled squash) 3 tablespoons butter or margarine, softened 1 tablespoon lime juice pinch honey or sugar or maple syrup 1 teaspoon chili powder salt and fresh-ground pepper to taste Preheat oven to 350 degrees. Rinse squash before cutting, then cut in half lengthwise and remove seeds. Place cut-side down in a glass baking dish and add water to a depth of 1/4 inch. Bake, covered, 20 to 30 minutes or until squash is soft but not mushy. Remove from oven In a small bowl, combine butter, lime juice, honey or sugar or maple syrup, and chili powder. Blend well. I didn't know what to do with the delicata squash so I usually buy it and use for a bowl ornament. Thank you! Then I love to use it for Pumpkin Oatmeal (see recipe in the files) or I even add it to my smoothies. I put it in the fridge and use as needed. Yum!
