This is so good, has a sweet and spicy hint to it.

Baked Squash with Spicy Lime Butter

 

2 delicata or sweet dumpling squash (they are the small hard shelled squash)

3 tablespoons butter or margarine, softened

1 tablespoon lime juice

pinch honey or sugar or maple syrup

1 teaspoon chili powder

salt and fresh-ground pepper to taste

 

Preheat oven to 350 degrees. Rinse squash before cutting, then cut in half

lengthwise and remove seeds.

Place cut-side down in a glass baking dish and add water to a depth of 1/4 inch.

Bake, covered, 20 to 30 minutes or until squash is soft but not mushy. Remove

from oven

In a small bowl, combine butter, lime juice, honey or sugar or maple syrup, and

chili powder. Blend well. If desired, season with salt and pepper. Spoon the

butter lime sauce into baked squash cavities and serve hot.

I will save the recipe for autumn. I didn't know what to do with the

delicata squash so I usually buy it and use for a bowl ornament. Thank

you! I'm not the most creative person in the kitchen lol

Oooh! I love delicata squash. I bake it, scoop out the flesh, and

puree it in my Vitamix. Then I love to use it for Pumpkin Oatmeal (see

recipe in the files) or I even add it to my smoothies. I put it in the

fridge and use as needed. Yum!
