Acini di Pepe Salad with Corn, Tomatoes and Basil

This is great meal for a hot summer day, lunch or dinner.

Orzo Salad with Corn, Tomatoes and Basil

 

Dressing:

2 tbsps. fresh lemon juice

1 tbsp. olive oil

1 tbsp. red wine vinegar

1/2 tsp. salt

1/4 tsp. black pepper

3 cloves garlic, crushed

 

Salad:

1 cup uncooked acini di pepe pasta (very tiny small round balls) or use orzo

pasta (rice shaped)

2 cups fresh white or yellow corn kernels

2 cups chopped tomato

1/2 cup vertically sliced red onion

1/3 cup sliced black olives

1/4 cup finely chopped fresh basil

 

To prepare dressing, combine first 6 ingredients in a jar; cover tightly, and

shake vigorously. To prepare salad, cook pasta according to package directions.

Drain, and place in a large bowl. Spoon half of dressing over pasta; toss to

coat. Cool to room temperature. Add the remaining dressing, corn, tomato, onion,

olives, and basil to pasta; toss to coat. Let stand 30 min. Yields 4 servings.

This is also very good cold.
