This morning he made them and the mix was super thick even after he doubled the milk. They ended up being tiny pancakes because the batter didn't spread out like pancake mix. It just sat there in a big lump. I thought they were yummy but hubby wasn't impressed because they didn't look or have a texture like pancakes. Anyway, my question is.... When making buckwheat pancakes should the mix be more like a dough, rather then a batter? Any tips on how to make them seem more like pancakes?          Tami Your life is an occasion. I have made buckwheat pancakes and the batter is approximately the same consistancy as regular buttermilk pancake batter. They do taste " different " though....I personally think buckwheat, which is not a true wheat but actually the seed of a weed like herb-like plant, is an aquired taste. Kinda strong but ok. Nancy C. Then he added one more cup of milk to it and it still wasn't like pancake batter. I think tomorrow I'll go into the kitchen to make them and see what happens. :-)          Tami Your life is an occasion. Most mixes are mostly wheat flour, but if it is pure buckwheat, I do not know what kind of consistency it would be. And, was it raised with baking powder and/or soda or was it yeasted. Guest guest Posted June 22, 2008 Report Share Posted June 22, 2008 I've always found that buckwheat pancake mix worked poorly. I use a recipe instead, an eggless one, that works much better. Yes, the taste is an acquired one, but we conquered that problem with a bit of cane juice crystals and cinnamon or fruit in the batter. Yummy! Guest guest Posted June 22, 2008 Report Share Posted June 22, 2008 The trick is to incorporate small amounts at first and then increase the proportion to your desired taste. I recommend replacing 1/4 of the flour in your recipe with buckwheat, then move up to 1/2. You may also want to add applesauce, peaches, or bananas for flavor.
