Guest guest Posted June 21, 2008 Report Share Posted June 21, 2008 Mango french toast INGREDIENTS: 6 pieces of wholegrain bread 3 egg whites and 1 egg a splash of milk a little oil for cooking @ 1 cup of frozen mango pieces 3 TBS cream cheese powdered sugar for dusting METHOD: Heat oil in a large skillet over medium-high heat. Whisk egg and milk together in a bowl. Dip bread into egg mixture and cook in skillet. In the meantime place frozen mango into a small saucepan and cook over super high heat and let cook down until saucy. To serve, place one piece of French toast on the plate, spread cream cheese and mango sauce over top. Place second piece of French toast on top, cut in half, and sprinkle with powdered sugar.
