Guest guest Posted June 20, 2008 Report Share Posted June 20, 2008 @@@@@ Spicy Lentil Ranch Dip Ingredients (use vegan versions): 1 pound dry lentils 1/2 cup finely sliced carrots 1/2 cup chopped tomatoes 1 package dry vegan ranch dip mix 1/8 cup soy sauce (or to taste) 1/8 cup lemon juice (to taste) 1 1/2 Tablespoons cumin Black pepper Cayenne pepper Salt Optional additions: finely chopped green onions Cook lentils until very soft. While hot, pour lentils into a mixing bowl and add salt, lemon juice, soy sauce, cumin, cayenne pepper (to taste or optional), black pepper and 1 package of Ranch Mix Party Dip. Depending on taste, sometimes I add another 1/2 package. The lentils can absorb a great deal of the seasonings. Mix together with carrots and tomatoes and refrigerate.
