The best way to preserve them is to cut them small, put them in ice trays (you know, those things that were for ice before ice makers?) and fill the trays with water and freeze them. I take the frozen chive cubes and put them in a freezer bag to store them. To use them, simply put the cubes in some warm water, and there you go, fresh chives. They have all the taste!
