With oatmeal for breakfast, beans and rice for lunch and a mostly non-red me*t (low-fat) dinner, my cholesterol is back to normal. The chol. meds did awful things to me. However, some of the Beans & Legumes recipes on the group's web site are attractive to me. My goal is to develop a variety of beans and rice lunches so I stay interested. That is sometimes the price of medicating, to take care of one thing; it typically causes other unwarranted side effects. Hopefully changing your lifestyle will prove that you can manage it or eradicate it through your diet alone. It is good to hear that you are having success with the recipe " corner. " I have wanted to adopt eating rice everyday, but spicing it up a bit with the surrounding items on my plate. I have always admired how the Japanese does that. I was reading that they consider rice the same thing as a meal. I have been seeking to learn how to make rice the Japanese way. It is an interesting process to making sushi rice. So, good luck with your beans and rice extravaganza. I am still looking to perfect that dish, especially with black beans and corn. It has been a long time since I made sofrito. Congratulations on the weight loss too! I am also looking to lose a bit more.
