Guest guest Posted June 17, 2008 Report Share Posted June 17, 2008 Grilled Mushroom Pizza 1 12 inch pizza crust (I use boboli or another premade one) 2/3 cup tomato sauce 1 1/2 cup grilled white or crimini mushrooms, sliced 1 grilled portabella mushroom, thinly sliced 1/4 cup fresh basil, chopped (or 1 tbsp/15 ml dried) 1/4 cup red onion, coarsely chopped (optional) 1 cup part-skim mozzarella cheese, shredded Place pizza crust on pizza pan or baking sheet. Spread with tomato sauce. Cover with grilled mushrooms. Sprinkle with basil. Top with red onions if desired. Sprinkle with cheese. Bake in 450 degree oven 10 minutes or on covered greased grill 10 to 12 minutes until crust is crisp and cheese is melted. To grill mushrooms: Lightly brush whole mushrooms with vegetable oil. Grill over medium-high heat, about 5 minutes, turning occasionally, until tender or do the same thing in a hot oiled skillet. Slice after grilling. Serves 2 to 4.
