Asian Ginger Peanut Noodles - 4 pts, Carbs 31g; Fiber 1g

Amount Measure Ingredient -- Preparation Method

8 ounces soba noodles -- or somen noodles, broken in half

2 tablespoons reduced sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon toasted sesame oil -- dark

1/2 tablespoon peanut oil

1/2 tablespoon freeze-dried chives

1 teaspoon ground ginger

1 teaspoon sugar

1/2 teaspoon onion powder

salt and freshly ground pepper to taste

1/4 cup unsalted chopped peanuts

 

In a large stockpot, cook the noodles according to package directions until al

dente. Drain and rinse under running cold water until completely cooled. Drain

well.

 

In a large bowl, whisk together the soy sauce, vinegar, sesame oil, chives,

ginger, sugar, onion powder, salt and pepper. Let stand 5 minutes to allow the

flavors to blend, then whisk again. Add the noodles and peanuts; toss to

thoroughly combine. Serve at room temperature, or cove and refrigerate up to 2

days and serve chilled.

 

Makes 6 side dishes or 3 to 4 main dish servings

This mildly spiced noodle dish is delicious served with lightly steamed or

blanced vegetables. Soba noodles, or Japanese buckwheat pasta, can be found in

Asian markets as well as gourmet and health food stores. Any thin pasta - such

as vermicelli - can be substituted.
