Guest guest Posted June 17, 2008 Report Share Posted June 17, 2008 * Exported from MasterCook * Asian Ginger Peanut Noodles - 4 pts, Carbs 31g; Fiber 1g Recipe By :The PDQ (Pretty Damn Quick) Vegetarian Cookbook by Donna Klein Serving Size : 6 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs Quick Spicy Vegan Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces soba noodles -- or somen noodles, broken in half 2 tablespoons reduced sodium soy sauce 1 tablespoon rice vinegar 1 tablespoon toasted sesame oil -- dark 1/2 tablespoon peanut oil 1/2 tablespoon freeze-dried chives 1 teaspoon ground ginger 1 teaspoon sugar 1/2 teaspoon onion powder salt and freshly ground pepper to taste 1/4 cup unsalted chopped peanuts In a large stockpot, cook the noodles according to package directions until al dente. Drain and rinse under running cold water until completely cooled. Drain well. In a large bowl, whisk together the soy sauce, vinegar, sesame oil, chives, ginger, sugar, onion powder, salt and pepper. Let stand 5 minutes to allow the flavors to blend, then whisk again. Add the noodles and peanuts; toss to thoroughly combine. Serve at room temperature, or cove and refrigerate up to 2 days and serve chilled.
